OkieChic-Cake Cookies In A Snap

Okay..
You know how it is..
You want a cookie..
fresh baked and good..
but you don't want to
go to all the trouble
of mixing and measuring..
and beating and
battering
(sounds like a cop show, huh)?


Anyway..
As I was stumbling through
BlogLand and checking out
my favorite blogs..
I popped in to see what
OkieChic was up to..
and she was baking cookies.


Not just any old cookies.
Nope!
These were easy-peasy
cookies on the run..
How quick can you make them?
Let me show you!


This fast!
SOMEONE
has learned to snap
her fingers..
not that we didn't drop
everything before and run..
but no..
now we do it at the
snap-of-a-finger.
In the
snap-of-a-finger
we made

First you take a box of
cake mix..

She used white, I think..
I used German Chocolate...

You stir in 2 slightly beaten eggs
And dump in

1/3 cup vegetable oilMix...mix...mix..
with a wooden spoon.

I am sorry to say we got

so taken with the bakin'

(rhyme there- GET IT?)

that we forgot to take pictures

of the rolling it into a ball part.

Anyway. scoop up a good tablespoon

of the dough and roll it around in

your hand until it is about the size

of a golf ball.

Place on an ungreased cookie sheet

and I flattened mine with

the bottom of a glass.

Bake at 350ยบ for 8 to 10 minutes.

I baked mine til they cracked a

bit on top but were still

soft inside. Then...I took about 1/3 bar of Cream Cheese and whipped it until it was soft...

Added about 2 cups of confectionery sugar,

vanilla to taste (I use about 1/2 tsp)

and I added bit of milk until I

had a nice smooth spreadable icing.

And, after they were iced

I added a bit of magic.

that you will see when

you are all done.

Snap those fingers, darlin'

and Nana will bring you a

glass of milk to go with your cookie..

Yes, indeedy.....

Cuz that is what Nana's do.

Now that's what I'm talking about! Snap cookies! I'm so going to do this this weekend! I'm going to try it with a spice or butter brickle mix. Oh, just think of the possiblities! Thanks for passing on the recipe!

I'm saving all my POINTS to eat a special Valentine's Dinner at Deep Fork Grill here in OKCITY on Monday. :) But...I'll tuck this sweet little recipe away and once I've lost my weight I'll celebrate by making a batch and eating lots of them.

And - her Momma beat me to taking her to Starbuck's. I had planned on taking her while Momma was in the hospital having the new baby. I thought doing "big girl" thinks would help Grace adjust. But, I made the mistake of mentioning it so her Momma took her to the Starbuck's drive thru. But - you haven't really experienced Starbuck's until you've been inside.... right?

Or... maybe we'll go to one of the self serve yogert places... or out to eat.... or to build a bear. Who knows?
