Thin Mint Girl Scout Cookies- Knock Off Recipe

I did do a post on this
in my early days of blogging.
But~because I made these
again today as a
Special Treat
for MyHero,
I decided it was a recipe
worth repeating.

These are
FAST & EASY
and you only need
TWO INGREDIENTS!

First of all you need
Andes Mints.
Now, just in case there are
any NON COOKS out there,
I will say that you need to
UNWRAP all those little suckers!
Then, put them in a microwave safe dish
and nuke them until they are melted.
My oven takes about 1 minute and 20 seconds.
Stir the melted chocolate so it
is smooth, baby, smooth.

Then unwrap a sleeve of
RITZ CRACKERS.
Yes, that is right-
Ritz Crackers.
Dip each one into the melted
chocolate using a fork and
shaking off all the excess
chocolate.

DO NOT
 put them on a
cookie cooling rack.
WHY?  Did you ask me WHY?
Well, because they come off looking like this!
Yeah- live and learn from a blond!

Sooo..Instead of doing that
BUTTER a piece of tinfoil.
When cooled you can pick the
cookies up and they look like this.
The one on the left is the top,
the one on the right is the back.
Now - if you want the real thing
you can always go here.

What's the
BEST PART
about these cookies?
Watching someone eat them.
He will get right on it...
right after he finishes the roll in his hand!

Now...let's see....I made him
cookies- He OWES me.
I'll take cash or a gift card-
His Choice!

Yum. I love those cookies so much I can't buy them or I eat the whole entire box within 2 minutes. But if I make them then I would have to wait until they cool at least. Great recipe.

I just buy them already made. Walmart's Great Value brand taste like the real thing, only they're cheap. They have a version of the Peanut Butter Patties, too!

Fun! I have also made these using a bag of milk chocolate chips and mint flavoring with the ritz... I love knock off recipies!

Those look so delicious, Diana. Mint Girl Scout cookies are my favorite! I saw Sweet Cheeks little video and started to laugh. Kids say the funniest things. Oh, I was the designated driver at the wineries. My husband got to spend some time with his sister. I was too busy taking pictures. hehe

Good Lord, is there any end to the use of Ritz Crackers. I agree anything sits on a Ritz especially chocolate.

How great is this. I've spread peanut butter between Rita and dipped them in both chocolate and white chocolate but have never heard of the thin mint version.

I'm glad you shared this recipe again, because I wasn't a reader of your blog the last time you posted it. Therefore, this is my first exposure to this wonderfully easy recipe.

With GS cookies about $4 a box now, I don't buy them anymore. I will definitely be trying this yummy-sounding recipe.

I ordered 12 boxes of cookies.....and I can't eat any of them. But my grnddaughters are brownies.
We are surviving. Hubby doing okay. I got us home. Now just resting up and healing. I am ready to feel better.
I wouldn't have thought of the ritz crackers. Your Hubby has such a cute smile.

Love the Thin Mints from GS. We keep them in the freezer.
I will have to try your version. I have a bag of Andes mint chips so I won't have to open all those pieces of candy! :)
