Cheater's Creamy Cheesy Cauliflower Soup

Are you a cheater?
Does your spouse or significant other know?
C'mon- Now is the time to fess up!

 I admit it.
I am a cheater.
Well, maybe not in the way
that you think!
My family thinks I slave away for hours
preparing my super delicious (ahem) meals.
Well,  I am here to tell you that
sometimes cheating is a
GOOD THING.
Seriously!
Take the case of
Creamy Cheesy Cauliflower Soup
Do I start with a fresh head of cauliflower?
Do I wash it and cut it and steam it?
No! I! Do! Not!
This is how I start MY SOUP!
Ha!
I microwave it as per instructions on the package.
While that is microwaving
I take 1/3 cup of butter and melt it
in a sauce pan.
Then I stir in 1/3 cup flour with a whisk.
After stirring for a few minutes
I add 2 cups of milk and
2 cups of chicken broth
2 Tablespoons of onion flakes.
and cook and stir for about 5 minutes
until thickened.
While that is cooking I put the bag of
Cheesy Cauliflower in the blender
and process until smooth-
(We like ours a bit chunky).
Then throw it into the crockpot
along with the soup mixture from the pot.
Add 1 cup of shredded cheddar and
cook on low until cheese is completely melted.

This is SO good on a cold winter's day.
If you want it even thicker
you can stir a few
dried potato flakes into the crockpot.
You will get rave reviews.

Ladle it up and throw a
few cut up green onions on top
to make it purdy!
Serve with a side salad and crusty bread.
Listen, make sure you throw a little
water on your forehead so that it
looks like you have been slaving
over a hot stove all day.
It really gives you a lot more
credibility....
not that
I would ever do anything like THAT!

Here's the recipe:

Cheesy Creamy Cauliflower Soup
Micowave 1 family size bag of 3 cheese cauliflower veggies
While that is microwaving:
Melt 1/3 cup butter
Stir in 1/3 cup flour (I use Wondra but reg flour will do)
Slowly add: 2 cups Swanson’s Chicken Broth
                    2 cups milk (or ½ and ½ )
Stir in:  2 Tablespoons onion flakes (or onion powder to taste)
Cook for a few minutes until thickened and bubbly
Using blender- puree bag of cheesy cauliflower then put in crockpot
Add soup mixture from stove top
Add 1 cup shredded cheddar cheese
Cook on low until cheese is melted and ready to serve
If you want thicker soup stir in potato flakes until you reach desired consistency

Just like the lady in the rice crispie treat commercials! I knew you were too good to be true! LOL
I cannot have this anymore and my guys would never touch cauliflower, ever. I would have done it before. I put it in my veggie soup, though, and I wash mine and cut it up all by myself! This is one thing I will buy frozen, depends on the price of it and fresh. I never buy frozen broccoli because I do not like the stems!
Have a good one and eat some of that for me.

What a great idea - and I don't even have to throw water on my forehead - dragging the blender out is enough to make this menopausal mama sweat profusely LOL.

Good Morning Diana, Your soup looks so yummy. We started our day at a -4, don't know the wind chill, just rolled over in bed and went back to sleep. Your soup looks yummy. On a cold day any kind would do or a pot of stew with hot biscuits. Cooking for one is a bummer, but Marie Callender's and I get do very well. I just wish you could get a smaller bags of salad mix, spinach, and that kind of thing. Have a great day. Many Hugs and Prayers from Your Missouri Friend.

Great recipe-I love cauliflower so I'm absolutely going to do this one. I love that Sandra (i think) chef who does semi-homade-noone ever suspected my chili, which won a prize, is cheater chili! That is how I like to roll...

how smart are you! sounds good.

Nonnie said...

You are a tricky lady for sure!!! :-) I will have to try this because the cauliflower would blend in so well with the cheese, that DH would never know there is a veggie in there. He eats around the broccoli in the broccoli cheese soup.

My goodness, Diana, that looks delicious. It's also a good idea if someone decides to drop in unexpectedly for supper. I must get the ingredients and try this. It's also very nourishing. The soup is full of calcium.

Ah you, you ....cheater...lol.

Way to go girl...and that does look delish.

Now I am going to make it, but I am going to have to "cheat" a bit by using a real cauli...because I can't find that product here in Canada...but don't worry, I won't tell.

Diana,
You're always cooking something special in the kitchen. This cheesy cauliflower soup looks so yummy. My husband loves soups in the winter, and I don't make them as much as I should. My mom always had a bowl of soup cooking on the oven. Those were the days. Have a fun weekend, Diana.
