March is half over already!!
How can that be?
AND
Saturday is
ST. PATRICK'S DAY!
Even all you
NONE IRISH
pretend to be
Irish
just for a day.
Well, except for a few of you
English that wouldn't
lower yourselves to do so.
You know who you are,
but being the
loving people we are,
we forgive ya,
and God Bless ya,
all the way to the
Blarney Stone and back.
I grew up in a small
Irish Community in Pennsylvania.
I believed in leprechauns
until I was at least 12...
well...maybe older...
hmm..matter of fact I'm
pretty sure I might
STILL BELIEVE
in them.
So, today I am going to
give you a little recipe.
You have a
COUPLE OF DAYS
get your butt to the store
for the ingredients so
you can make it for your family.
And your family will lay down
in your path and let you walk on
them after eating this.
Ready?
Now please don't be asking me
where I got this recipe because
the truth is
I don't remember.
So, if anyone has the source for it
I will be glad to give credit.
I THINK it came out of a
Taste of Home magazine but
I'm not betting my
IRISH CHINA
on that fact.
Crème de Mint Cake
1 box Betty Crocker® SuperMoist® white cake mix
Water, vegetable oil and egg whites called for on cake mix box
2 teaspoons mint extract
12 drops green food color
2 jars (16 oz each) hot fudge topping
1 container (8 oz) frozen whipped topping, thawed
Thin rectangular crème de menthe chocolate candies, unwrapped and cut into pieces, if desired
Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour.
Make cake batter as directed on box, adding 1 1/2 teaspoons of the mint extract with the water. Reserve 1 cup batter. Stir 3 drops of the green food color into reserved batter; set aside. Pour remaining batter into pan.
Drop green batter by generous tablespoonfuls randomly in 12 to 14 mounds onto batter in pan. Cut through batters with metal spatula or knife in S-shaped curves in one continuous motion. Turn pan one-fourth turn; repeat cutting for swirled design.
Bake as directed on box for 13x9-inch pan. Run knife around sides of pan to loosen cake. Cool completely, about 1 hour.
Carefully spread fudge topping evenly over cake. In medium bowl, stir whipped topping, remaining 1/2 teaspoon mint extract & remaining 9 drops green food color. Spread whipped topping mixture evenly over fudge. Garnish with candy pieces. Store covered in refrigerator.
Now, I will tell you that being
St. Paddy's Day
all the calories
have all been removed
so you can enjoy every bite.
( Removing those calories
is an Irish trick that I promised not to tell)
I'll be serving it to
The Fam here in the Heartland.
Let's hope one of the grandkids doesn't
eat all the Andes Mints beforehand
because if they are gone
YOU KNOW
they will blame it on
they will blame it on
THIS ONE.
Have a wonderful day as you prepare yourself
for all the
IRISH DRUNKS
IRISH DRUNKS
that will be running amuck on
Saturday.
I won't be one of them because I don't drink
GREEN BEER.
I will be the one sitting in the corner
taking pictures for
BLACKMAIL PURPOSES-----
and that's all I'm gonna be
saying about that!
Happy Thursday!

I will join you in the corner to take pictures:) That cake looks delicious! Enjoy your day dear friend, HUGS!
Man o man! That cake looks good! I will not be cooking up any St. Pattys Day foods because ill be at the beach. I was gonna make cornedbeef and cabbage egg rolls but not gonna happen this weekend! Ill be on th coast searching for leprechauns. Maybe I can find some green wine? Ha
Lisa
The cake certainly looks yum! Happy St. Pat’s Day to you! Hey, I proudly claim my 1/32 Irish heritage. 🍀
Of all days our denomination is having a Day of Prayer on Saturday and Joe signed us up to go. So I can't make my Irish Stew like I usually do that day. And I certainly won't have time to bake a cake. I like the way it looks, but I don't think I would want mint with my cake. Maybe I'm wrong. But in any case, enjoy it!
thats a beautiful cake !!!!
It looks yummy!
I am so hungry now. Looks delicious. I have a friend who lives in Nashville TN who will be cooking an Irish dinner for her family using her grandmother's recipes.
No Irish blood over here, but I can still enjoy cake!! Or maybe not. I gave up sweets for Lent! Can you believe it?? My husband's 50th, our anniversary, Valentine's Day, my 50th and now I have to pass on Mint Cake? I didn't plan this out very well, did I? I think I'm going to have a lot of making up to do after Easter, especially since I celebrated my birthday with candles in cornbread!!
St. Patrick's day is big here. This 100% Italian girl married a 100% Irish man. My sister-in-law makes the best Irish soda bread 🍞.
Enjoy, the cakes sounds awesome
Cindy
It's hard to believe St. Patrick's Day is just around the corner! Ah! Where does the time go?
This cake looks amazing and I bet it tastes incredible. Thanks for the recipe, my friend. Hugs!
Hi Diana, oh that cake looks and sounds so good. I hope you enjoy celebrating St. Patrick's Day on Saturday with everyone. :0)
I can definitely be Irish for one day to make this cake!! Mint? Yum! I love those candies. I may have to eat a few or 12 while baking. I'll just get two bags :-)
I know I must have some Irish in me!! My Grands do love those Andes mints so much I bet they would eat up this cake. I've got some lovely shamrock plates to serve it on!!
OH MY. I don't even care how many calories are in that cake. It looks delicious...pinning!
Diana, That cake looks so yummy. Your little ones wouldn't eat all the mints would they? I like those things myself. I remember an old fellow who used to sing all kinds of Irish tunes. My mom and dad used to take me with them to the local bar that celebrated St. Pat's day. Miss those old fun times and my parents. Blessings for a great weekend, xoxo, Love you, Susie
Looks YUM! You remind me that it's time to make soda bread, too! A favorite! Maybe two loaves this year, one to eat, one to share.
I too grew up in an Irish-Italian neighborhood in Astoria-Queens in those days and now it's Greek, lol.. My first little boyfriend was Robert Riley and couple more Irish boys followed, hihihhiii.
So yes, the Irish soda bread it's very familiar to me and we all used to wear a shamrock pin (I still have it) at school and got kisses. We loved the parade !
Have a happy 'Irish-St. Pat's Day' pretty Irish girl.
Blessings,
Fabby
PS: I'm so happy you liked my valance matching the chairs.
Oh, that cake looks good! I'm not sure that I've ever bought Andes mints even once in my life! This would be a good reason! I'm one-quarter Irish. My paternal grandfather came over from Ireland as a young man. I should be making this cake!
That cake oh my. Yum!!!! Can you drive down with a piece for me!!! Terry's mom is 100% Irish but no Irish on my side. Have a super duper day.
xoxo
This Crème de Mint Cake looks scrumptious, Diana. Your family will LOVE IT! I love anything mint. I laughed when you were talking about the leprechauns saying 'I'm pretty sure I might STILL BELIEVE in them.' How fun for you to have grown up in a little Irish community. Love that dancing Irish fellow at the end of your post.
Have a great day, Diana.
love, ~Sheri
Mmmm..that cake looks good, now I want to rush out to the store and get some Andes Mints!!! Have a good day!!!
I have been wearing green all week in honor of St Patrick's Day, Diana!!!! Hope you have a fabulous day!
And, I'll be the one sitting in the corner eating CAKE! :)
xoxo
That cake looks delicious, Diana. I hope all the Andes mints aren't gone at the grocery. Darling post, my friend. xo ♥
I copied and sent myself that recipe. Looks yummy! Happy St. Pat's day. Corn beef and cabbage for us. Love, sandie
Cute cake
That sure does look delicious. During the parade, people on the floats throw candy to the crowds. It's funny to see the kids running around to get the candy. We might have a storm on Sat. but last year it rained hard at times but the parade marched on. I expect the same this year!
Enjoy the day and have fun, Diana!
Looks so yummy! Some of our kids are coming over Sunday to celebrate. Yes, we know we're a day late, but gotta do what ya gotta do. :) Oh, and are you telling me Leprechauns aren't real? :(
hugs,
Jann
Thank you from the bottom of my Irish heart. Now, that not only looks good it is something I can do!. This was the year I was going full Irish and the house was going to be decorated and it was going to be perfect! Well, not so much of that happened, but I can bake a cake!!
Nonie
Oh that LOOKS SO DELICIOUS Diana. However, I'm afraid I would eat it all as the Pres doesn't care for cakes (pies, yes!!). Besides, vacation is coming up and I have to fit into bathing suits and shorts. Tell you what though, you have an extra piece for ME!!..:)JP
That cake sounds yummy. Thanks so much for the recipe.
have a wonderful time with your family.
Irish hugs,
Mary
Have fun! Cake. I do love cake, Diana. Even us Norwegian/Scotch/English like green when it's on a cake.
Oh what a beautiful cake I am going to make it! Happy St. Patrick's Day my friend! xo Dolly
Your post reminds me to buy some chocolate to put my son's leprechaun's trap.. that is now residing in garage.. :D
Ha ha, I will be the one taking the blackmail photos too! xx
Yum! I bet that is so good!
Your cake looks amazing! Enjoy!
I'm all Irish so the day has quite a bit of history for me. Many years were spent celebrating in an Irish pub in Arlington, Virginia where my boyfriend (named Gillooly) was a bartender! Nothing good ever came of it:) But we sure had fun. Unfortunately my mom died on March 18th so it's a bittersweet time for me. Thanks for reminding me of the good stuff. xo Kathleen|Our Hopeful Home
What a fabulous recipe! Thank you!
That sounds delicious!! And it looks so pretty too!! I may have to try it! Happy St. Patrick's day to you and your family! Sounds like you will all be having a lovely time! I'm "green with envy"....lol. Well, maybe just green...not supposed to envy! LOL.
Top of the mornin' to ye, Diana. That cake looks positively delish! Thanks for removing the calories. Have a wonderful weekend full of the luck of the Irish!!
Looks delish Diana....have a great St Paddy’s Day🍀
Boyfriend is Irish!
Cheers!
Linda :o)
Cake looks yummy! You crack me up lady. I just adore you. Your realness is what attracted me to your blog and I so enjoy visiting. Well, I will be in the midst of putting baseboards down in kitchen tomorrow but I think I just might cook some corn beef and cabbage in the crock pot. Happy St. Patrick's Day! Hugs and blessings, Cindy
OOO, I love mint any way I can get it....
Diana, looks like a beautiful and tasty cake. I ate so much mint chocolate one day that I turned green! I think I'll be sitting in the corner with you..Happy St. Paddy's Day my friend..xxoJudy
Cake looks wonderful..SO you grew up with Leprechauns...that explains a lot!! Watch what you say about the English, lady!! Love your china..Didn't you give that to a family member?? Enjoy your weekend..lay off the green beer!!
Wow that cake looks delicious! Son and DIL are going out for date night tonight and staying in tomorrow to avoid all the crazies :)
I personally thinK that all "MYTHOLOGIES" have a basis in reality :) Across the board, all older civilizations have some sort of stories about Little People; leprechauns included.
The cake really does look delicious...that creamy icing especially! I have actually made it to day three of eating less, so I'm sticking to it for a few more days. Gosh, that cake looks good!
HAPPY ST. PATRICK'S DAY, Diana!! That cake looks so delicious! We are going to dinner tonight with a group of friends who wanted Italian food! Evan and I feel that is just WRONG. LOL! We will miss our corned beef, cabbage and Irish soda bread! Have a wonderful weekend. blessings ~ tanna
Looks delish Diana! I love an easy cake recipe looks like you fussed. Hope you had a wonderful St. Patrick's Day to ya! Jane
What a wonderfully delicious Irish cake!! It's mighty kind of ya to be sharing it. How lucky to be of Irish decent I'm not sure if I have any in me unless the Finnish mixed with the Irish. I wear my festive Irish shirt just in case :). Your post is cute and funny, it's always a pleasure to stop in!
Enjoy the rest of the weekend!!
Saimi
Save a piece for me. ;-) I love mint.
We hit 50 yesterday here in Northwest Wisconsin.
xx oo

Just a note to say thank you for visiting my blog. I do love the sounds of that St. Patrick's Day cake.
I'm Irish! The cake looks delicious but I'm more about bread...am making soda bread this week. St. Pat's day is any day I get around to it.
Your cake is so cute! xoxo Su
That cake certainly looks delicious.
Too bad I am just now reading this cake recipe! It would have been perfect for a birthday cake for my daughter who turned 22 on St. Patrick's Day. 22 years ago I became a mom for the first time at age 22. How time flies! looking at my daughter today, hard to believe I was as young as her when I gave birth to her. The years have a way of flying by! I will have to save this recipe in my file for next year. It sure looks some good! Hugs to you sweet friend :)
Well, that sounds good but I'm too late for this year so maybe next year! And yay! tomorrow is the first of Spring! This is one time I don't mind time going quickly...I'm over Winter! Fortunately, I live in the sunny South so we're already enjoying warm days and lots of blooms! Have a wonderful week!
hugs,Cecilia
The cake sounds so good, Diana! I will have to remember it for next year. I made green velvet cupcakes for my St. Paddy's Day dessert. Have we talked about both of us living in PA when we were little?? Maybe we have, but my mind forgets.
Your little Anna Ireland is such a doll baby and I'm sure had a wonderful birthday celebration.
I hope you survive your break! Love and hugs....
