I was craving
KEY LIME PIE.
Being completely honest here-
I did NOT have Key Limes nor did I have
Key Lime juice.
So---I made this with one of those
funny little squirt cans of
LIME JUICE.
So- I am calling this
SPRING LIME PIE
So-ALL you need for this pie?
Egg yolks, Lime Juice &
SWEETENED CONDENSED MILK
Heavily butter your pie dish
because there is NO crust.
Whisk all ingredients together and
pour into pie pan.
Bake, Eat, Enjoy!
That's it! That's all she wrote, folks.

However, when it is served
here it looks more like this!
We like a
LITTLE PIE with our WHIPPED CREAM.
Here's the recipe:
3 INGREDIENT CRUSTLESS KEY LIME PIE
Preheat oven to 350.
Heavily BUTTER a glass pie dish.
3 egg yolks (or 3 eggs*)
1 can SWEETENED condensed milk
1/2 cup LIME juice.
Beat eggs yolks slightly (*If you use whole eggs you will get more of a cheesecake consistency-which is also good)
Add sweetened condensed milk and lime juice.
Whisk or stir until well blended. Do NOT beat mixture.
Bake in preheated oven for about 30 minutes...then keep checking every 5 minutes until it is completely set and a knife inserted in center comes out clean. The very outer top ridge will be just slightly brown.
Do not overbake.
This cuts and serves beautifully -
as if it had a crust!Serve with whipped cream.
This is so good and so easy and you can substitute lemon juice for the lime if you like.
It's a perfect little treat~

Oh Diana, you have brought back a childhood memory. Remember when kids would say "Kiss my foot!"? The recipe sounds yummy!
The WORLD owes you a Foot-Kiss for the wonderful shine and spirit you bring to it!
I've never actually BAKED one of those, but have used that same filling for donuts, eclairs, fritters, between cake layers, in trifles, and once in an enormous three-meringue Pavlova as part of a "dessert extravaganza" that a client ordered for a big party.
And for anybody wondering about the safety of those unbaked egg yolks---the Lemon Juice baptizes any and all germs. From the Gospel of Mammaw.
(And I have a nickety-nack time getting a crust-pie to "cut beautifully" so we'd probably end up with bowls and spoons).
Well, I don't care for lemon or lime flavored desserts, so I can obstain from kissing those feet! LOL It does sound like an easy dessert that most everyone else I know would love!! xo

Just now remembering that whilst we enjoy Edwards' Key Lime Pies from the freezer section, we lament that they seem to have ceased making the LEMON variety. Those were the ABSOLUTE apogee of pies, the Grail sought, the most luscious BOUGHT concoctions there WAS, and now we cannot find them, even on Amazon. The lime is a good strong tangy effort, but we saved up our 1.79 to buy a Lemon one every two weeks at Safeway, and rationed little scrimp slices for a special treat. Haven't seen one in years. SIIIIIIIGH.
