Fast And Easy Coffee Cake And A BIG FAT FLOP

You know how it is when you start out 
with high hopes for a quick little treat?
My daughter belongs to a MOPS
(Moms Of PreSchoolers) 
and even though she won't go to the 
meeting this week she needs to supply
a simple little coffee cake.
So, we hauled out the recipe book
and made a wonderful coffee cake.
Well....We THOUGHT it was going to be wonderful.
It was in a BUNDT PAN and SOMEONE me
failed to prepare the pan properly 
(didn't flour it after greasing it-duh)
So it came out kind of a FLOP.
HOW DO YOU CURE A FLOP?

Hmmmm.....maybe with some icing?
Ummmm...NOPE!  That didn't work....
EPIC FLOP!
Do YOU ever have FLOPS?
No?  Liar, Liar, Pants On Fire
It seems like everyone in Blogland is SO perfect.
Guess what?  All those PERFECT PEOPLE?
Yeah- Ummm.....That's not real.
REAL PEOPLE have REAL FLOPS sometimes.

So.-After OUR flop~ 
I used OUR because I like to share
the credit where I can~
it was back to the drawing board.
We I found a different recipe this time.
Ah-  A perfect recipe with few ingredients.
A good thing 
being as I had used all the "good stuff" on 
THE FLOP.
We I ditched the BUNDT PAN and used an 
8x8 pan this time
(GREASED AND FLOURED-
thanks for asking.)
SOOO much better!
Oh, yeah, baby....
AND speaking of baby...
notice how cleverly I worked the word 
BABY in there?

Yeah, right- FAT chance of THAT happening
with a 2 year old, a 4 year old, 
a new baby and a C-Sectioned Mom!

Here's The EASY Coffee Cake Recipe...
SO GOOD!

Coffee Cake

1 1/4 cups all-purpose flour
1/2 cup sugar
1/4 cup sour cream
1/4 cup  butter + 2 teaspoons Cinnamon
1/3 cup milk
2    eggs
2 teaspoons baking powder
1/2 teaspoon salt
1 medium (1 cup) tart cooking apple, peeled, cored, chopped

Topping

1/3 cup all-purpose flour
1/3 cup firmly packed brown sugar
1/4 cup Butter  + 2 Tablespoons  Cinnamon
                                

Heat oven to 375°F. Combine all coffee cake ingredients except apple in bowl; stir just until moistened. Stir in apple.
Spread batter into greased and floured  8- or 9-inch square baking pan.
Combine 1/3 cup flour and brown sugar in bowl; cut in 1/4 cup  butter and cinnamon until mixture resembles coarse crumbs. Sprinkle over coffee cake batter. Bake 28-32 minutes or until toothpick inserted in center comes out clean. Cool completely.

  1. Diana, You know darn good and well....I have made my share of flops. That pan one has been done here too. LOL The little cake looks perfect. The bundt one looks okay, but I am taking your word for it being a flop. You will be enjoying the children today. Squeeze that sweet baby for me. xoxo,Susie

  3. Oh darn! No- not me I've never done anything that was a flop!! HA! LOL... I made pumpkin pie for Thanksgiving one year and forgot the sugar! Let me tell you it was bad! No one wanted to eat that one!! Pure sweetness is a joy to see!

  5. What a little cutie pie! She looks just darling in that cute little hat! What??! You mean you really don't believe that all of us bloggers are perfect?? You don't think we all live in magazine spread houses, that look perfect ALL the time?? And of course we are all perfectly coiffed and decked out to the nines:) Ah, well at least we can give the illusion! Just cover everything in glitter and I'm all set!

  8. Okay, so I guess they know what they are talking about when they say to flour the pan too! I've taken many shortcuts in the past when I don't have an ingredient or just (more likely!) "forgot!" - all with varying results! Sometimes the flops make it easier to just gobble it up all by myself - after all, wouldn't want to serve well loved family members something that just doesn't look right, would we?

  11. That coffee cake sounds scrumptious! I thought it looked fine from the bundt pan. You may find your day includes picking up some crumbs from the floor.:-) I'm sure all those in your charge will enjoy sampling the coffee cake that stays at home. xo Nellie

    Oh she is some baby lover Baby. I am a baby lover. Your baby Grands are adorable. She is adorable for sure.

    I know your doing hugs today so a hug from me and all the gals here. Now easy squeeze's don't want to crush her. Wow she is growing so fast in those days of after being born.. Oh man her moms milk factory is one milk supply. This baby is going to be a real healthy looking baby grown up soon.

  17. Oh my goodness, she's so cutie...a cutie pattootie...congrats.

    And flops, snort...bread that doesn't rise, tortillia's that looked NOTHING like the blogger's photos, and tasted like old dishtowels, they almost broke teeth....caramel sauce that ran out of the bowl....the list goes on.

    Of course not everything turns out, lol.

    Good for you for trying aging and doing such a great job of it, bet it tasted great.

  23. Been there done that (fire in the oven with daughter's cookie cake the night before her party flop). The cake looks yummy. I have a go to coffee cake recipe we make every Christmas.

  25. Cooking I can do~! Baking? not so much.. I also keep pudding and dry milk in the cupboard just in case I do any baking- "flop cake" crumbled in a huge bowl- mix together pudding- add to cake pieces,stir- cool whip on top, sprinkle cinnamon- chill.. Its known as Sonny'misu giggle.. everyone thinks I've gone to extreme trouble to make them a fabulous 5 star dessert.. what they dont know wont hurt um so,,, shhhhhhhhhhhhhhhhhhhhhhhh.....

  26. Oh boy Dianna, this looks wonderful and what a great idea to fix the not good looking part of the flop cake with a nice icing...I love this idea!
    I once flopped out a cake for dessert that was Mil's récipe and did it so many times!!! I had a very important invitation and it came out a total flop, couldn't even fix it...SO! I went out and bought a lovely dessert from the bakery, lol! We always have flops, but I ain't gonna post about it, lol!

  28. I love that the coffee cake has apples in it! Yum! I've had many flops...one of the biggest was when I was baking lemon bars in a pyrex dish in the oven. The bottom of the dish definitely said "oven safe." Well, the dish must have been defective because just a few minutes after popping it into the oven, it exploded! Like, the glass dish literally exploded in tiny shards all over the oven! So, we not only had tons of glass to clean up, but also gooey lemon bar batter everywhere. Ugh. Love the pic of bright eyes and her sweet head band! You know, in Texas, you pretty much HAVE to put a big ol' bow on your baby girl. It's like the law or something. :)

  38. OK OK...I have flops too...lucky for me I have 2 children and a hubby who could give a fat rat's "arsh" what it looks like and will eat my flops anyway!!! And baby baby what a cutie patootie she is...just loving those chunky monkey arms!

  39. Hi Diane, Oh my gosh the baby is adorable in that darling hat. For the cake, flop or not I bet it was delicious. I tell ya, at least you had time for a do over. I flopped so bad once at Thanksgiving. Had people over for dinner. I was so proud of the pumpkin pie I made till we went to cut it and everyone could see I forgot to take the thin layer of freezer paper out from between the pie crust bottom. LOL It was a major flop, but once we pulled the paper out, it taste pretty good. A pile of mush but tastey just the same!! LOL LOL So glad I'm not the only one who makes flops.

  41. I have had more than my share of flops. And my DH has unfortunately heard and had his fill of my tantrums over the flops. But for the bundt pan, Baker's Joy has been one of the best things ever for my success in getting the cake out of the pan. I bet the flop was still yummy. But nothing as yummy as the sweet kissable face of a darling baby!!

    This cake sounds good! :) LOL I remember making brownies early fall. New mix says FAMILY SIZE or something. Well the perimeter baked perfectly and the middle, to my dismay was a fudgy MESS. HA ....I just cut all around it, served the brownies on a dish instead of in the pan and no one was the wiser here. Threw the middle in the garbage can. Oh well! :)
