BEST BANANA BREAD -- EVAH!!!

I wish I could take credit
for this recipe but it comes from
my sweet friend, Barb D.
She used to make it for her hubby,
our friend, Jeff, before he passed away.

It is, hands down,
THE BEST 
BANANA BREAD EVER~~

This time of year we have lots of
OVERRIPE bananas
and this is the perfect recipe 
to use them up.
Barb, I added a couple of things for our family---
Sugar and Vanilla-
You know me!

Here is some of what you will need--

Banana Bread- Barb's Recipe
1 Box KRUSTEAZ banana bread mix (or Duncan Hines/any brand)
1/4 cup flour
1/3 cup sugar*
1/2 cup nuts (or to taste)
3 small ripe bananas (DO NOT MASH)-quarter lengthwise and dice into small pieces (slightly larger than peas)
3 eggs
1/2 cup water
1/4 cup vegetable oil
1 Tablespoon good vanilla*
In large bowl:  Combine mix, flour, sugar and nuts.  Toss diced bananas into dry mix and stir to coat.
In separate bowl: Whisk together- eggs, water, oil & vanilla. Add to dry mix.
Stir just until moist.  
Sprinkle extra nuts on top if desired.
I use two regular size loaf pans and make 2 loaves.  Barb uses a large loaf pan and makes one big loaf.
Bake @ 350° -about 45 minutes for small loaves-over an hour for large loaf-or until tester comes out clean.
Barb sometimes adds: peeled apple, pear, coconut, drained crushed pineapple.  If you add fruit cut back on water content.
*I added the sugar and vanilla-it was not part of Barb’s original recipe—but you know me!

My son is a banana bread NUT 
(little play on words there).  
He says this is the best he has ever had.

So- there you have it.
ALL the monkeys in my family
seem to like it....
Except for THIS ONE!
He seems to like his
BANANA BOTTLE
better than anything.
I guess it is better than drinking THIS---
which I may resort to if life doesn't 
settle down here soon.

  1. Just toooooo da*n hot, to bake anything, around here. Oh well, whatever one bakes, is "not good for you" anyway. I suppose I should welcome the forced "goodness." >,-)

  3. Diana, That is one thing all my daughters can make well. Banana bread. Ted loves it when they try to compete with each other and give him bread to judge. LOL He likes them all.     In the last few years, I have used Pamela's gluten free mix for most of my baking needs, as I have cut wheat and Most sugar from the diet....
    Your recipe, rather your friend's, is wonderful.....

  6. This banana bread looks amazing, Diana. You can tell from your pictures that it's moist and Yummy. And a little dab of butter is the way to go. Did I ever tell you that Jess' fiancé makes us banana bread with chocolate chips every Christmas? Oh my, it's delicious. That's one tradition I won't give up hehehehe.

  13. Yum I am going to make this tonight when it cools down and I feel like putting the oven on. I have some ripe banana's just waiting to be put into this bread recipe. Yummo! I think adding the good vanilla makes the bread so much better too. Have a good week my friend.

  28. I am and always have been a banana bread fan... I have a recipe from of my grandmothers that I used to make years ago... it was moist and very tasty... this one looks really delicious Diana xox

    Oh doesn't purging feel awesome, the older I get the easier it gets... Valentina likes to hold on to things, when she goes to camp again, I already have that lady set up to come in help me purge Valentina's 2 closets. I honestly don't think she will miss anything as she doesn't even know what she has these days... I am loving how organized I have become... the less the better, so much less chance of becoming a clutter bug (still a way to go but I am on the right track) xox

  33. I guess there is a challenge on here since I think my banana bread recipe is the best EVAH!! I will try this one and compare the two. I will take on the hard but necessary job of taste testing both breads and I may even do a blind taste test with my husband and son, who also think mine is the BEST! Not this week though.....96 degrees here tomorrow!!

  52. This recipe really sounds delightful! I've never just cut up bananas for nut bread, and that sounds intriguing to me, so I will definitely have to try it! I understand things must be very crazy at your house with that monkey hanging around with a yellow bottle, lol! Just keep him away from your overripe bananas so you can make more 'nana bread :) Praying for you all!!!!

  54. Banana Bread sounds wonderful! I have not been blog hopping for a while. So here I am catching up with all your posts. Your friends recipe is yummy looking. Since I am now sitting here in September, my friend Linda has a recipe for Apple slices drenched in chocolate and eaten like candy apples. This time of year reminds me of my mom and I can see her baking apples for us. I sure love stopping here and hope you will blog as much as time allows. Love to you and John. God bless you.
