I felt guilty
ALL THE WAY HOME!
Kind-of...
okay...just a little bit guilty.
There is a house that no one lives in
close to my son's house.
They check it once or twice a season.
They have a
HUGE RHUBARB PATCH.
Every year it goes to waste!
Well, when I pulled into my son's drive
my eyes were immediately
drawn to that poor neglected patch.
That LITTLE DEVIL on my shoulder
whispered in my ear.
He said- DO IT!
GO TAKE SOME RHUBARB.
HE did not say STEAL
HE said TAKE.
So- ahem- I did!
Look at the result of my theft good fortune.
The DEVIL made me cut this rhubarb up
and slather it with sugar and a crunchy top.
Oven ready!

Here it is as I doubled it.
This makes a 9x13 pan FULL-(greased pan)
Rhubarb Crisp
8-10 Cups rhubarb, cut into ¾” pieces
1-1/2 Cups sugar
2/3 Cup flour
1 Tablespoon cinnamon
TOPPING:
2 Cups flour
1-1/4 Cups brown sugar
1 Cup Oatmeal- I used the one minute kind
1 Cup melted butter
Directions:
1. Combine rhubarb, sugar, flour and cinnamon and put in an 9x13 greased pan.
2. Combine flour, brown sugar, oatmeal, melted butter and sprinkle crumbly mixture
over rhubarb.
3. Bake a 350 for one hour or until golden brown and bubbly.
We like it served with a scoop of ice cream
but it is
GREAT with whipped cream, too.

Perhaps you are actually HELPING the rhubarb plant by now encouraging it to grow more. (Kind of like pruning a tree) You are making me think about making strawberry / rhubarb crisp... Mmmmm, good.
ReplyDeleteOh glory! She's thieving now and her hero ate it. That makes him an accessory. Lol!!! Guess what? I've never had rhubarb in my life. Never saw it in the stores, either. Wonder if it's just too hot to grow around here? What does it taste like?
ReplyDeleteYou are helping the plant. That would be my story IF I had ever done such a thing. *sputter* Okay, once, I harvested a few peonies from an abandoned house. It didn't hurt the plant and I enjoyed the bouquet. I even have photos of this dastardly deed somewhere. I have my own patch of rhubarb and you are giving me ideas!
ReplyDeleteLol, too funny. I think if they planted and aren't there to, ahem, encourage it to grow more, then it's logical for the neighbor's mother to help out. I confess I've never had rhubarb either. Sure looks good.

I have had rhubarb pie, but not very many times. It doesn't grow much around our area and I don't see it sold in the stores. The times I have had it, the cook mixed strawberries in with the rhubarb, not sure why but it was delish!

ReplyDeleteI have not had rhubarb anything in so long. I'm not even sure I remember what it's like. But - that plant is beautiful. Could you just grow rhubarb in a flower garden? I'm thinking you could. It looks like an ornamental plant to me.

ReplyDeleteA lady always came to my grandmothers and would ask to pick some. every year she would say yes. One year came and she not only took some, she took the plants. No more rhubarb after that. Mean person.

I was just looking at rhubarb plants at the nursery the other day. My mom always had a big patch of it, but I can not for the life of me remember what it tastes like. I think I'll run back and grab some of it. It may be too late for this year, but it'll be back next year. Unless someone steals it of course.

We had rhubarb growing in our yard when I was little. I always thought it was just a weed. Then my grandmother would come over and make pie and try to get us to eat it. I would never touch it. It was a weed!! She also used to have us gather dandelions for her salad. More weeds. Ick. Now that I am older and so much more cultured, I understand their culinary appeal...but I still won't eat them. Once a weed, always a weed...at least in this kid's mind!
ReplyDeleteI've had a strawberry (or was it cherry) rhubarb pie once, before I had to go gluten free, Diana, and I remember it was delicious. Yours looks mouth wateringly good! I think it would be more of a sin to let that rhubarb just go to seed without anyone enjoying it.

Oh Diana, I will take the total blame for encouraging you to help that beautiful patch of rhubarb to continue to grow this season!!! So...glad you liked it and especially your hubby! smile... When my daughter lived in South Dakota, she said she tried to kill it off (Lord forgive her), then when she moved to Georgia and worked in a greenhouse, she couldn't believe how terribly expensive it was down there. It was always a staple around the home places here in Iowa growing up!!

Hello. You did that plant a favor, as if you pluck it each stem out, it will grow back and get two portions, now you will have to go back! It really looks yummy! I love it so much, it is tangy and when you add the sugar you have a perfect combo!

You know I've never had rhubarb pie before, and i have to trust a recipe from a woman who wears a big red hat so well! I think it's the people who left the houses fault. Cause if they were there you wouldn't have borrowed any!
