THREE INGREDIENT CRUSTLESS KEY LIME "PIE"-OR LEMON PIE

Ladies & Gentlemen~
You are going to bow down and kiss my 
 pedicured unpedicured feet after you try this!
Seriously!

I was craving
KEY LIME PIE.
Being completely honest here-
I did NOT have Key Limes nor did I have 
Key Lime juice.
So---I made this with one of those 
funny little squirt cans of
LIME JUICE.
So- I am calling this 
SPRING LIME PIE

So-ALL you need for this pie?
Egg yolks, Lime Juice & 
SWEETENED CONDENSED MILK
Heavily butter your pie dish
because there is NO crust.
Whisk all ingredients together and 
pour into pie pan.
Bake, Eat, Enjoy!
That's it!  That's all she wrote, folks.
Above is the 
PRETTY VERSION.
However, when it is served here it looks more like this!
We like a 
LITTLE PIE with our WHIPPED CREAM.

Here's the recipe:

3 INGREDIENT CRUSTLESS KEY LIME PIE

Preheat oven to 350.
Heavily BUTTER a glass pie dish.

3 egg yolks (or 3 eggs*)
1 can SWEETENED condensed milk
1/2 cup LIME juice.

Beat eggs yolks slightly (*If you use whole eggs you will get more of  a cheesecake consistency-which is also good)
Add sweetened condensed milk and lime juice.
Whisk or stir until well blended.  
Do NOT beat mixture.

Bake in preheated oven for about 30 minutes...then keep checking every 5 minutes until it is completely set and a knife inserted in center comes out clean.  The very outer top ridge will be just slightly brown.  Do not overbake.

This cuts and serves beautifully -as if it had a crust!

Serve with whipped cream.

This is so good and so easy and you can substitute lemon juice for the lime if you like.

  3. Diana, Your pie looks good and your feet are beautiful. LOL. Sorry, that is not enough whipped cream on the feet. LOL That recipe sure seems so easy.   16. Man, oh man! Another easy recipe that I will be trying this week. I'll take mine without the whipped cream. I may be the only US Citizen that does not like it, but there you go....I'm a little different. I bet some crushed graham crackers sprinkled on top would be good. I love your pretty little square plate. Have a great Sunday. It's raining here, but I managed to ride the bike a little over 8 miles.

  24. Yum! I love Key Lime pie, save a piece for me! It IS low calorie, right? The best I ever had was at the (sadly) now closed restaurant in Savannah that Paula Deen and her brother owned, called "Uncle Bubba's Oyster House". She used pecans in the graham cracker crust, and the whipped cream was SO good! Better than just about any I'd ever had, I think it must have had a higher butterfat content in it or something. Knowing Paula, I am sure it did:)

  35. I love key lime pie in the warm months. It's such a tart and sweet light dessert. Perfect for summer! I have never made it homemade. I had no idea it was so easy. My favorite version comes from a local grocery store bakery down the road from me.

  47. This pie is a delicious treat. My son-in-law grew up in the Florida Keys so this is his favorite and my daughter finds the Key Lime juice at a specialty store so she can whip this up for him! Hee Hee. Have a great week sweet friend.

  48. Hubby gave up sweets for lent therefore so did I, it has been a long month without any desserts of any kind. This sounds (and looks) so good and I am in such a mood for lemon or lime pie, either one would make me happy. I will keep this in mind for Easter Sunday.
