When I saw this recipe on
Cathy's blog- Cobblestone Farms
I thought it
LOOKED GOOD.
In fact, it looked SO GOOD
that I whipped it up that afternoon.
It made a wonderful little
Valentine's Day treat.

The only changes I made to
this recipe was to add
an extra teaspoon of vanilla
to the cake AND the frosting.
AND~ I, being a bit weird,
poked holes in the top of
the cake so the icing could
drip down inside.
I can't remember how many
years it has been since I
made a Bundt cake.......
a l-o-n-g time!
LOOK at that icing!
A maraschino cherry fills each hole.
Oh-So-Good.

Easy Chocolate Cake-Cobblestone Farms
Bring to a boil
-1 stick of butter
-1 cup of water
-1/2 cup oil
-3 tablespoons of cocoa...while waiting mix...
-2 cups SIFTED flour
-2 cups sugar together...then add
-2 eggs
-1 teaspoon vanilla
-1/2 c. buttermilk
-1 teaspoon soda
... stir and pour first 4 ingredients over the mixture
...mix together well and place in greased pan (bundt)
...Bake at 350 degrees for 30 minutes (mine took 50 mins)
ICING-Bring to a boil...
1 stick butter
6 tablespoons of milk
4 tablespoons of cocoa -then add...
I added 2 teaspoons vanilla)
1 pound of powdered sugar (sifted)...stir well
Oh that does look yummy! I have an old lemon cake recipe that you poke holes into for the icing to work into the cake. Putting the cherries on it is a cute idea! Wouldn't you know I married a man that doesn't fatten up!

I can see where that would have no calories, and I may try it the next time we have pot luck at church. I'm a strange bird, I like cake while it is warm, but seldom eat any of it, once it gets cold.

Oh yum! Funny, you should post this now. I also made a bundt cake this weekend (actually 2) after years of not making any. The family and folks at church liked them so much I may have to do it much more often.

I never use a bundt cake pan - the one in the picture is just an itty bitty one - I always use a regular cake pan which takes 30 min. I'm sure a big bundt cake pan would take a lot more time - sorry about the confusion! ;-)
