PREPARING (A CAKE) FOR ST. PATRICK'S DAY!!!!

March is half over already!!
How can that be?
AND 
Saturday is 
ST. PATRICK'S DAY!


Even all you
NONE IRISH
pretend to be
 Irish  
just for a day.
Well, except for a few of you
English that wouldn't
lower yourselves to do so.
You know who you are,
but being the
loving people we are,
we forgive ya,
and God Bless ya,
all the way to the
Blarney Stone and back.

I grew up in a small
Irish Community in Pennsylvania.
I believed in leprechauns
until I was at least 12...
well...maybe older...
hmm..matter of fact I'm
pretty sure I might
STILL BELIEVE
in them.

So, today I am going to
give you a little recipe.
You have a 
COUPLE OF DAYS
get your butt to the store
for the ingredients so
you can make it for your family.
And your family will lay down
in your path and let you walk on
them after eating this.

Ready?
Now please don't be asking me
where I got this recipe because
the truth is
I don't remember.
So, if anyone has the source for it
I will be glad to give credit.
I THINK it came out of a
Taste of Home magazine but
I'm not betting my 
IRISH CHINA
on that fact.
Crème de Mint Cake
1 box Betty Crocker® SuperMoist® white cake mix
Water, vegetable oil and egg whites called for on cake mix box
2 teaspoons mint extract
12 drops green food color
2 jars (16 oz each) hot fudge topping
1 container (8 oz) frozen whipped topping, thawed
Thin rectangular crème de menthe chocolate candies, unwrapped and cut into pieces, if desired
Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with baking spray with flour.
Make cake batter as directed on box, adding 1 1/2 teaspoons of the mint extract with the water. Reserve 1 cup batter. Stir 3 drops of the green food color into reserved batter; set aside. Pour remaining batter into pan.
Drop green batter by generous tablespoonfuls randomly in 12 to 14 mounds onto batter in pan. Cut through batters with metal spatula or knife in S-shaped curves in one continuous motion. Turn pan one-fourth turn; repeat cutting for swirled design.
Bake as directed on box for 13x9-inch pan. Run knife around sides of pan to loosen cake. Cool completely, about 1 hour.
Carefully spread fudge topping evenly over cake. In medium bowl, stir whipped topping, remaining 1/2 teaspoon mint extract &  remaining 9 drops green food color. Spread whipped topping mixture evenly over fudge. Garnish with candy pieces. Store covered in refrigerator.
Now, I will tell you that being
St. Paddy's Day
 all the calories
 have all been removed
so you can enjoy every bite.
( Removing those calories
is an Irish trick that I promised not to tell)
I'll be serving it to
The Fam here in the Heartland.
Let's hope one of the grandkids doesn't
eat all the Andes Mints beforehand
because if they are gone
YOU KNOW
they will blame it on
THIS ONE.

GREEN BEER.
I will be the one sitting in the corner

  2. Man o man! That cake looks good! I will not be cooking up any St. Pattys Day foods because ill be at the beach. I was gonna make cornedbeef and cabbage egg rolls but not gonna happen this weekend! Ill be on th coast searching for leprechauns. Maybe I can find some green wine? Ha

  4. Of all days our denomination is having a Day of Prayer on Saturday and Joe signed us up to go. So I can't make my Irish Stew like I usually do that day. And I certainly won't have time to bake a cake. I like the way it looks, but I don't think I would want mint with my cake. Maybe I'm wrong. But in any case, enjoy it!

  7. No Irish blood over here, but I can still enjoy cake!! Or maybe not. I gave up sweets for Lent! Can you believe it?? My husband's 50th, our anniversary, Valentine's Day, my 50th and now I have to pass on Mint Cake? I didn't plan this out very well, did I? I think I'm going to have a lot of making up to do after Easter, especially since I celebrated my birthday with candles in cornbread!!

  8. St. Patrick's day is big here. This 100% Italian girl married a 100% Irish man. My sister-in-law makes the best Irish soda bread 🍞.

  14. Diana, That cake looks so yummy. Your little ones wouldn't eat all the mints would they? I like those things myself. I remember an old fellow who used to sing all kinds of Irish tunes.   16. I too grew up in an Irish-Italian neighborhood in Astoria-Queens in those days and now it's Greek, lol.. My first little boyfriend was Robert Riley and couple more Irish boys followed, hihihhiii.
    So yes, the Irish soda bread it's very familiar to me and we all used to wear a shamrock pin (I still have it) at school and got kisses. We loved the parade !

  17. Oh, that cake looks good! I'm not sure that I've ever bought Andes mints even once in my life! This would be a good reason! I'm one-quarter Irish. My paternal grandfather came over from Ireland as a young man. I should be making this cake!

I laughed when you were talking about the leprechauns saying 'I'm pretty sure I might STILL BELIEVE in them.' How fun for you to have grown up in a little Irish community.   26. That sure does look delicious. During the parade, people on the floats throw candy to the crowds. It's funny to see the kids running around to get the candy. We might have a storm on Sat. but last year it rained hard at times but the parade marched on. I expect the same this year!

  36. I'm all Irish so the day has quite a bit of history for me. Many years were spent celebrating in an Irish pub in Arlington, Virginia where my boyfriend (named Gillooly) was a bartender! Nothing good ever came of it:) But we sure had fun. Unfortunately my mom died on March 18th so it's a bittersweet time for me. Thanks for reminding me of the good stuff. xo Kathleen|Our Hopeful Home

    I personally thinK that all "MYTHOLOGIES" have a basis in reality :) Across the board, all older civilizations have some sort of stories about Little People; leprechauns included.

  54. Too bad I am just now reading this cake recipe! It would have been perfect for a birthday cake for my daughter who turned 22 on St. Patrick's Day. 22 years ago I became a mom for the first time at age 22. How time flies! looking at my daughter today, hard to believe I was as young as her when I gave birth to her. The years have a way of flying by! I will have to save this recipe in my file for next year. It sure looks some good! Hugs to you sweet friend :)

  56. The cake sounds so good, Diana! I will have to remember it for next year. I made green velvet cupcakes for my St. Paddy's Day dessert. Have we talked about both of us living in PA when we were little?? Maybe we have, but my mind forgets.
