WHAT is better than Lemon Pie?

I decided to give this a try because it looked 
SO GOOD!
This is THE RICHEST lemon pie 
I have ever tasted.
Decadent, really.
What MAKES it a Triple Lemon Treat?
These three things.
Place your crust in the pie pan and then brush with melted butter.
This keeps your pie crust from getting SOGGY.
Don't  you HATE soggy crusts?
I do!
Beat your husband for all the smart mouthed things he has said to you  eggs!
 (I promise NOT to report you to the Egg Police)
And stir in other ingredients

Then-make a collar for your crust
to keep it from burning.
and pour filling into pie pan.
I am amazed that lots of people don't do this.
It gives your a nicely browned, slightly crisp
edge that does not crumble when cut.
After baking remove the tinfoil collar 
and cool in fridge.
The pie bakes with a slightly brown top.
It's supposed to do that.

a lot of it has lost its flavor for him.
However, don't feel bad-
it could be a whole lot worse.
One piece of advice-
DO NOT make this if you LOVE LEMON.

Here's the recipe for those of you
that couldn't find it:

Triple Lemon Pie
  • Makes: 8 to 10 servings
  • Prep 30 mins
  • Chill 4 hrs
  • Cool 1 hr
  • Bake 35 minutes
Lemon peel, lemon juice, and lemon extract give this citrus pie its tart yet tasty flavor.

ingredients

  • - inch unbaked piecrust
  • teaspoons butter, melted
  • cups sugar
  • tablespoons all-purpose flour
  • eggs
  • 1/2 cup dairy sour cream, room temperature
  • tablespoon finely shredded lemon peel
  • 1/2 cup lemon juice, room temperature
  • 1/4 cup butter, melted
  • tablespoon pure vanilla
  • teaspoon pure lemon extract
  • Whipped cream (optional)
  • Lemon slices (optional)
  • Raspberries (optional)

directions

  1. Preheat oven to 375 degree F. Use a pastry brush to brush 2 teaspoons melted butter over the bottom and sides of unbaked piecrust. Set aside.
  2. For filling, in a large bowl, combine sugar and flour; set aside. In a medium bowl, beat eggs with a rotary beater, wire whisk or fork. Beat in sour cream until smooth. Beat, whisk or stir in lemon peel and juice, 1/4 cup melted butter, vanilla and lemon extract. Gradually add lemon mixture to sugar mixture; stir till well combined. Immediately pour lemon filling into the pastry-lined pie plate. To prevent overbrowning, cover edge of pie with foil. (Note: To protect the edges of the pie from overbrowning, fold a 12-inch square of foil into quarters. Cut a 7-inch circle out of the center. Unfold and loosely mold the foil over the pie's edge. Do this before you pour filling into piecrust. If filling sits in piecrust, this will make the piecrust soggy.)
  3. Place pie on the center oven rack in the center. (Note: Do not use a baking sheet under the pie because it will affect the baking time.) Bake in a 375 degree F. oven for 35 to 45 minutes or till lightly golden brown. Center of pie should appear almost set when gently shaken (2 inches around edges of pie should be set).
  4. Cool on a wire rack for 1 hour. Cover and chill for at least 4 hours or overnight before serving. To serve, if you like, garnish pie with whipped cream, lemon slices and raspberries. Makes 8 to 10 servings.

  2. It looks wonderful but since my stomach surgery I can't eat lemon. Although I might make it for a man I know if he behaves himself. And he knows who he is.

  7. Thanks for the tip about covering the edges of the crust. Would you believe I bought a "thingy" that was made to cover the edges, but it appears it has run away somehow before I even had a chance to use it!

  20. Okay I have learned two things about baking that I did not know. I didn't know that brushing the pie bottom with butter kept it from getting soggy - I made a tomato pie and drained the tomatoes but it still go soggy. And I didn't know and I didn't know about putting a collar around the outside! Thanks.

  26. I LOVE lemon, serioulsy LOVE it. Might just have to make this:) One of my favorite desserts is phyllo shells filled with lemon curd and whipped cream....I'm an ok cook but a pretty good baker and i Love making pies (apple soon enough for Thanksgiving). Did you know there's a simple aluminum ring you can buy to cover the edges of your crust while it's cooking? I used to use the foil method but it drove me crazy (I'm not very patient, go figure.) Anyway, it's very cheap and does a good job, and it's reuseable. Hope you and yours have a blessed and wonderful Thanksgiving! xo Kathleen|Our Hopeful Home

  28. This looks delicious! Lemon pie was my father's favourite. I think my mom just used the Sherrif lemon pie mix in a box. I think your recipe steps it up a notch! For some reason I always think of making lemon desserts around Easter. Maybe it's the colour. Perhaps you have inspired me! -Jenn

  31. Oh yeah, lemon pie! Good tip about brushing the crust with buttah...and the foil collar. Back in the day when I baked pies, I used foil to cover the crust. Hope your Hero is doing well and staying out of trouble. xoxo

  32. OHHHHHH!!! I LOVE anything lemon and this pie looks SOOOOOO good! I've never brushed on butter to prevent soggy crust - I'll have to try it. I usually use egg white but such a waste of an egg for just a few brushes of white on the crust.

  36. Ooh, I loved all your pie tips, and the photo collage of how to make the pie collar. I usually just cut strips of tin foil but this is a better idea! That lemon pie recipe just looks so good, and I can see why the "canary" got in there and ate it all! Hope things settle down for you soon :)

  38. Lemon is my favorite sweet... I make lemon pie or tarts for all the holidays... they are so yummy... this looks delicious... I would have to hide it so I could have a couple of pieces for myself xox
