CHUNKY APPLE CAKE FOR THOSE THAT WANT TO GET CHUNKY & Update On Mr T.

Helllooooo Wisconsin!
We DO like our butter here.
We also like apples...
okay..and flour and sugar...

I have played with this recipe over the years
and it is pretty darned good -
if I do say so myself.
I made this when my cousins 
from Pennsylvania
were here a while ago.

Sure do love my cousins and don't see them
nearly often enough.
One cousin contacted me for the recipe
so I assume that means it was good.
Anyway-that meant I needed to type it out.
Here it is.
Grease a 9x13 pan.  Preheat oven to 300

Mix together:
2 cups flour
2 cups sugar (white)
2 tsp baking soda
1 tsp cinnamon ( I used Apple Pie spice)
dash of salt

Add  above to:
Two sticks butter
Four eggs
Cream two sticks butter and blend in 4 room temperature eggs(that is important-don't use cold eggs) 

Add the flour mixture above.
Stir until well blended.
Then stir in:
4 cups peeled apple chunks
2 cups walnuts

Spread in greased pan.

Bake ONE hour a 300.  It is hard to test for doneness because the apples stay "wet".  It should look a bit "dry" on top.  You may have to add additional time depending on how much water your apples have in them.

Cool completely and frost with Cream Cheese Frosting.

Cream Cheese Frosting:
1 stick butter
3/4 pound confectionery sugar
2 tsp vanilla
1 -8 oz pkg cream cheese

Cream butter and cream cheese together and add sugar. Beat well and then add the vanilla.

I also sprinkle the top very lightly with the Apple Pie spice after it is frosted.


Serve with good hot coffee or tea or ice cold milk.,
These two little girls sure loved a treat...
They are older now but still
as sweet as they were back then.
I think I might make a pan of this for fun-
just in case anyone in the family  
 is thinking about getting skinny on me!

for Mr T?
They did a spiral biopsy but it was inconclusive.
He is having another biopsy next week.
Please continue to keep him in your prayers.
He is not doing well at all.
His mom-my friend,Sandy,
is holding up pretty well.
She's a trooper--but pray for her, too.
You all know how hard it is to 
have a sick child.
We'd rather be sick ourselves.

  1. Diana, I will pray for your friends. Now another biopsy and the waiting. Hope it's a good report. Your little granddaughers...so sweet. Hug them for me. Yesterday I made a simple dessert for my daughter and granddaughter...sliced strawberries and whipped cream. I ate yogurt, as I do not eat little seeds.   3. I have lots of cousins. A few of them I get to see when we go to the beach. They stay at the same campground we do. We also have a summer cookout and a Christmas party each year to all stay in touch.
    Thanks for sharing that recipe! I may try making this in muffin form. I eat too much when its the shape of a cake! Haha.

  6. We call that Apple Harvest cake and make it in a sponge cake ring..It really doesn't need and icing ;)..I don't know if I am strong enough to stir the batter any more..I used to let my husband do it !!!Happy Sunday

  13. First of all, I'm so sorry to hear about Sandy's son. Just said a prayer for him and her as well.

    Oh my gosh, this chunky apple cake looks amazing. Kind of like Jess' mother-in-law's carrot cake, soooo moist. Your title cracked me up when I saw it. Yes, it looks like you can get chunky eating this delicious dessert. The picture of the girls is cute. I'm glad you got to see your cousins and catch up. : )

  14. Being skinny is overrated especially when you can eat cake as delicious sounding as this one, lol. I want to make it!
    Will continue to pray for Mr T and his mom Sandy. It is very hard to see your child ill, no mater what their age is.
    I'm trying to get back into a routine...it's been hard after all the wedding prep and excitement! Hope you have a great week!

  21. This apple cake has to be amazing, as any recipe you share is :) I will save it to my files for when I can cut up an apple again... after the 2 surgeries this month, it will be a while. I will continue in prayer for your friend's son, Mr. T. So difficult, as you said, to go through something with your child, you'd rather it be yourself!
