C'mon- Now is the time to fess up!
I admit it.
I am a cheater.
Well, maybe not in the way
that you think!
My family thinks I slave away for hours
preparing my super delicious (ahem) meals.
Well, I am here to tell you that
sometimes cheating is a
GOOD THING.
Seriously!
Take the case of
Creamy Cheesy Cauliflower Soup
Do I start with a fresh head of cauliflower?
Do I wash it and cut it and steam it?
No! I! Do! Not!
This is how I start MY SOUP!
Ha!
I microwave it as per instructions on the package.
While that is microwaving
I take 1/3 cup of butter and melt it
in a sauce pan.
Then I stir in 1/3 cup flour with a whisk.
After stirring for a few minutes
I add 2 cups of milk and
2 cups of chicken broth
2 Tablespoons of onion flakes.
and cook and stir for about 5 minutes
until thickened.
While that is cooking I put the bag of
Cheesy Cauliflower in the blender
and process until smooth-
(We like ours a bit chunky).
Then throw it into the crockpot
along with the soup mixture from the pot.
Add 1 cup of shredded cheddar and
cook on low until cheese is completely melted.
This is SO good on a cold winter's day.
If you want it even thicker
you can stir a few
dried potato flakes into the crockpot.
You will get rave reviews.
Ladle it up and throw a
few cut up green onions on top
to make it purdy!
Serve with a side salad and crusty bread.

Creamy Cauliflower Soup
Micowave 1
family size bag of 3 cheese cauliflower veggies
While that
is microwaving:
Melt 1/3 cup
butter
Stir in 1/3
cup flour (I use Wondra but reg flour will do)
Slowly add:
2 cups Swanson’s Chicken Broth
2 cups milk (or ½ and ½ )
Stir
in: 2 Tablespoons onion flakes (or onion
powder to taste)
Cook for a
few minutes until thickened and bubbly
Using
blender- puree bag of cheesy cauliflower then put in crockpot
Add soup
mixture from stove top
Add 1 cup
shredded cheddar cheese
Cook on low
until cheese is melted and ready to serve
If you want
thicker soup stir in potato flakes until you reach desired consistency
LOVE how you think! This sounds, looks and I bet tastes sooooo good. My husband loves cauliflower soup so think I will have to "slave" over the, love the water tip too.....clever and cute!!

ReplyDeleteI cannot have this anymore and my guys would never touch cauliflower, ever. I would have done it before. I put it in my veggie soup, though, and I wash mine and cut it up all by myself! This is one thing I will buy frozen, depends on the price of it and fresh. I never buy frozen broccoli because I do not like the stems!
Have a good one and eat some of that for me.
What a great idea - and I don't even have to throw water on my forehead - dragging the blender out is enough to make this menopausal mama sweat profusely LOL.

Good Morning Diana, Your soup looks so yummy. We started our day at a -4, don't know the wind chill, just rolled over in bed and went back to sleep. Your soup looks yummy. On a cold day any kind would do or a pot of stew with hot biscuits. Cooking for one is a bummer, but Marie Callender's and I get do very well.
